Here are some healthy alternatives for your celebrations:

 

Raspberry Antioxidant Drink

 

Raspberries, apples and grapefruit are good sources of Vitamin C, which help support the immune system and contain antioxidant properties.

 

 

 

Preparation

  1. Place grapefruit, apple, raspberries, mint and honey into mixing bowl and blend 1 min 30 sec/speed 10.
  2. Scrape down sides of mixing bowl with spatula.
  3. Add water and mix 10 sec/speed 3. Transfer into a jug and place into refrigerator to chill for 20 minutes.
  4. Divide between 6 serving glasses and garnish with extra mint (optional) before serving.
  5. You can use either pink or red grapefruit in this recipe.
  6. You can replace honey with pure maple syrup in this recipe.
  7. Try replacing the raspberries with any other kind of berry (blueberries, blackberries, strawberries). You can use either frozen or fresh berries.
  8. This juice is best consumed on the day it is made. The grapefruit may become bitter overnight.
  9. Enjoy!!!

 

 

Stuffed Buttercup Pumpkin 

 

This is an amazing alternative recipe for replacing meat like ham or turkey roast.

Pumpkin and other vegetables along with quinoa are very healthy and light compared to meat.

Ingredients for Stuffed Buttercup Pumpkin:

  • 1 butternut pumpkin, cut into halves lengthways
  • 40 g olive oil
  • 1 sprig fresh thyme, leaves only
  • 1 sprig fresh rosemary (approx. 10 cm long), leaves only, finely chopped
  • 600 g water
  • 100 g quinoa
  • 1 red onion, cut into halves
  • 1 garlic clove
  • 1 celery stalk, cut into pieces
  • 1 carrot, cut into pieces
  • 1 sweet corn cob, kernels removed
  • ½ tsp ground cumin
  • 20 g currants
  • 30 g pine nuts, toasted
  • 1 – 2 sprigs fresh coriander, roots, stems and leaves, sliced
  • 2 tsp tamari sauce
  • sunflower seeds, for sprinkling
  • 70 g feta cheese, for crumbling (for vegan option omit this)

 

 

Vegan Berry Cheesecake 

 

This beautiful and colourful vegan cheesecake is full of nutrition and antioxidants. It is really easy to make and no baking required.

Ingredients:

Base:

  • 150 g biscuits (vegan/glutenfree)
  • 50 g vegan butter/margarine

Filling:

  • 400 g Frozen berries (strawberries, blackberries, raspberries, blueberries)
  • 1 1/2 dl sugar
  • 300 g cream cheese (vegan version)
  • 2 1/2 dl coconut cream/ whipping oat cream)
  • Vegan gelatine

Topping:

  • Berries/ Lollies

Preparation:

1.Mix the biscuits and vegan butter and make it a base for the cake by flattening it to the prepared tin.

2. Heat up the berries with sugar in a pot. Strain the extra liquid. Place half of the mixture with vegan cream cheese and mix it together. Whip the coconut cream or oat cream in a separate bowl.

3. Put the rest of the berries in a pot and add the gelatine by bringing it to boil. Add the whipped coconut cream/oat cream. Pour it into the prepared tin.

4. Place the cake mixture into the fridge for at least 3 hours or overnight.

5. Decorate with fresh berries and lollies. Enjoy!!!

 

 

 

Strawberry and Watermelon cake with Vanilla Cream  

 

Strawberries and fruit are just the best for festive recipes.

Watermelon layer in this cake is a great alternative for heavy cake dough and gives amazing freshness.

Ingredients for Strawberry and Watermelon cake with Vanilla Cream  

 

Almond dacquoise

  • 250 g caster sugar
  • 190 g almonds
  • 5 egg whites

Watermelon layer

  • ¼ watermelon, cut into slices and rind removed (approx. 5 mm thickness)
  • 1 tbsp caster sugar

Vanilla cream

  • 600 g pouring (whipping) cream
  • 60 g caster sugar
  • 3 tsp natural vanilla extract

Assembly

  • 500 g strawberries, cut into halves, to decorate
  • 2 tsp sugar
  • pistachios, roughly chopped, to decorate
  • rose petals, dried (optional)
