- 400 g coconut milk
- 60 g raw sugar
- 1 lime, grated zest, no white pith, and juice (to taste)
- 1 avocado, flesh only
Preparation
- Place a bowl onto mixing bowl lid and weigh coconut milk into it. Transfer into ice cube trays and place into freezer overnight or until frozen.
- Add sugar and mill 20 sec/speed 10, or to a fine consistency.
- Add frozen coconut cubes, 1-2 teaspoon lime juice (to taste) and half of the grated lime zest and blend 1 min/speed 1-5, increasing speed gradually from speed 1 to speed 5 or until smooth and creamy. Scrape down sides of mixing bowl with spatula.
- Add avocado and blend 1 min/speed 1-6, increasing speed gradually from speed 1 to speed 6.
- Scrape down sides of mixing bowl with spatula and blend 1 min/speed 6 or until smooth and creamy.
- Sprinkle with remaining lime zest and serve immediately (see Tips).
